Whey Permeate Concentrate is made from fresh, pasteurised whey, remaining after cheese making. The proteins are extracted from the whey using ultrafiltration. The liquid concentrate is then further concentrated and dried. Whey protein concentrate powder (WPC) is available with between 35 % to 80 % whey protein.
In the food processing industry WPC is used in the manufacture of baked products, desserts, sauces, chocolate, milk beverages and sports nutrition and diet food, for example. In the food industry, the product is used in milk substitutes.

Replacement for skimmed milk (WPC34), alternative to egg-white (WPC80), boosts nutritional value of finished product, fat mimetic, good water-binding properties, gelation effects, excellent stabiliser, high solubility in a wide range of pH conditions, viscosity development, whipping/foaming properties, browning of baked products.
Product must be stored in a cool, dry place, at temperature below 25°C and relative humidity below 65%, product has a 2 years shelf life in the original packaging.
